William Beekman, who founded Beekman Farm back in 1802, was of Dutch origin. So we've re-created what would surely have been one of his favorite treats.

Historically, Dutch bakers would make two thin waffles using leftover breads and other baked goods and then sandwich them together with a sticky layer in between, often molasses. 

Cookies were "softened" by laying them atop steaming cups of cider, tea or coffee, so they were often oversized to sit across the rim of a standard flask.

The Beekman 1802 Stroopwafel is stuffed with our famous goat milk caramel.   Each cookie is an enormous 3.5 inches in diameter and fits perfectly over the Beekman 1802 Enamelware Mug or virtually any mug you have in your home.

Because our cookies are not made with the day old breads, you can omit that last step and portion them however you want.  Of course, we always recommend sharing.
