We usually have at least one pasta dinner a week. When we arrive home late from a trip, or just working long hours, there's nothing more satisfying than boiling some pasta and tossing it with olive oil, fresh grated cheese, fresh vegetables, or Mortgage Lifter Sauce.
But we never planned on offering pasta on Beekman 1802. We didn't think we could find any made locally, that was special enough to share. And then we found a food artisan in the Catskill Mountains who was making some of the best dried pasta we've ever tasted. It's hearty, but light. And it has a real flavor of its own...not like that boiled grocery store stuff. Naturally, it's made by hand, in small batches, using NY State organic wheat and farm eggs.
