Kaalhoofd is the Beekman version of traditional Tete de Moine...similar in style but made with a blend of goat and cow milk. Loosely translated, Kaalhoofd means "bald head" in William Beekman's native Dutch language. Why? Because the traditional way of serving this cheese is on a griolle - or cheese curler. (Choose the Kaalhoofd & Curler Bundle to save over 30%) And when the wheel is cut in half horizontally, and placed on the griolle, it is said to resemble a monk's bald head (with the rind as his hair on the sides.) But you can serve it however you wish, in chunks, grated, or shaved with a vegetable peeler to create maximum surface area for maximum flavor.
Flavor notes: Nutty, grassy, floral flavor, with a slight acidic sweetness. Kaalhoofd is made using a thermophilic starter culture – meaning that the bacteria that produce this cheese grows at higher temperatures than other typical cheese cultures. So we cook the curds at a much higher temperature than most cheeses, resulting in very small curds about the size of a grain of rice. These curds are extremely hot, so our cheesemakers have to hoop (put into molds) the curds quickly in order to keep their hands from being burnt. The resulting Kaalhoofd has a very dense, smooth texture...like Gruyère cheese without the holes.
