NY State was once the largest producer of apples in America. (In fact our nickname, the Empire State, comes from the Empire variety of apple.) Sharon Springs has an amazing climate to grow apples, and our new, fresh apple cider vinegar is made with apples grown right here in Sharon Springs. We're launching with two great varieties that are 100% handmade with local ingredients - Heirloom Garlic and Rosemary. Our vinegar is raw, unfiltered and unpasteurized, so will naturally become cloudy as it ages. You will see a natural film develop at the bottom of the bottle called "Mother." That's completely natural, and boosts the vinegar's potency as it ages. Though not necessary, if you wish to clarify the vinegar, simply pour through coffee filter.
